El Nevado is named for Nevado del Huila, the snow-capped volcano that rises over this part of southern Colombia. The coffee comes from hundreds of smallholder farmers in the region. Each farm is small, so their harvests are combined into one community lot. Before anything goes in, each small lot is cupped on its own, and only the ones that taste right make the cut. That's how coffee from hundreds of farms can still taste like one coffee.

It grows at 1,600 to 1,900 meters in the shade of native trees. The altitude and shade slow down how fast the cherries ripen, which gives them more time to build up sugar. After picking, the coffee is washed, meaning the fruit is removed before the beans dry. That keeps the cup clean and lets the sweetness come through.

In the cup, baked apple leads. Caramel brings the sweetness, and cocoa rounds out the finish.

The result is sweet and balanced. It's comfortable without being boring.

On resting: Our coffees are roasted to order. For the first couple of weeks after roasting, the coffee keeps releasing CO2. As it settles, harsh or roasty edges soften and the sweetness comes forward. We recommend resting this one at least 10 days after the roast date. Washed, high-grown coffees like this one usually taste best between 2 and 5 weeks.
